Cheese Ravioli with Balsamic Brown Butter Sauce!

Cheese Ravioli with Browned Butter Balsamic Sauce!

I was feeling creative...and so I found a few recipes to use what I had in the fridge (not wanting to have to go to the grocery store for one little thing!)


I made the same filling that I put in my stuffed shells, 16oz Ricotta Cheese, 2 cups Mozzarella Cheese, 2 cups Parmesan Cheese, 1 egg, Parsley and Basil, and Salt and Pepper to taste.


I made my dough (3 cups flour, 2 eggs, 1 tsp salt and 1/2 cup warm water) kneaded, and let sit for 15 minutes...rolled it out, filled them with the cheese mix, and folded over and pinched the dough to make my raviolis! I let it sit out for an hour to "dry out" the dough before dropping them in boiling water for 5-6 minutes...then


I made this Balsamic Brown Butter and then added a little cornstarch and flour to thicken it and make a sauce! Delicious! Especially topped with some freshly grated Parmesan.

The world according to Kycen!

Kyecen asked to borrow mommy's camera, of course I said yes...I love seeing the world through a kids eyes, especially my kiddo : )

We spent Sunday outside, washing cars and enjoying a "warm" day outside!!!

Here is our Sunday according to Kyecen!  I think that this might become a new weekly post, I think I might like this better than Pinterest Tuesdays!


















Kyecen is actually a really good photographer, especially for a 3 year old! There are a few fingers and camera straps in pictures, but he has is really has the hang of getting his whole subject in the shot...even if he is just trying to get a picture of the whole street! He wanted to show grandma where is house is! and I promise he didn't get any help with these, I just let him take off with the camera and saw what he took afterwards!

Salted Caramel Chocolate Cupcakes

Another tasty adventure in our kitchen! Kyecen and I had a little bit of fun today!

I combined my favorite Hot Chocolate Cake recipe, filled them with a little melted caramels and topped with a Salted Caramel Buttercream!!! Delicious!!!

I made a caramel sauce by melting caramels with some milk to thin it out, then poured it into the little spaces I made in the cupcakes! (mini's of course!)

To make the Salted Caramel Buttercream, I made a simple buttercream frosting and blended in a few tablespoons of the caramel sauce, delicious!
 We also made our favorite peanut butter frosting to top some of the chocolate cupcakes!!!

He is getting so big!

I cannot believe how big Kyecen is getting! I know that he is getting older and wiser every day...but in the last couple weeks we have seen and heard his "maturity" blossom! He is so sure of himself and his attitude...ugh the attitude! It really hit me looking at some of the pictures I took of him at the park today, his baby face gone :( He is really starting to look like a little man! Some days he even acts like a little man too!

I think this picture really capture his "big boyness" So serious, just watching everything around him

I love that he calls everything we do a date :) whether it's errands or going to the park, I get to go on dates with my little man all the time!


The Critter Barn

Kyecen and Mommy had the pleasure of going to the Critter Barn for one of our dates :)

To say the least Kyecen had a blast! His papa would be so proud that he really is his little farm boy at heart! The dirt, the animals, the hard work! He loved it all and we will go back often!

I think Kyecen's favorite part were the bunnies! They were out everywhere to be petted and even some babies to be picked up!

We were greeted in the parking lot by this fluffed up turkey, he like to follow the kids that were afraid of him...he has quite a personality on him!

You have to scoop to pick up the baby chicks! 

Make sure you hold the baby bunnies close and keep their feet tucked in! Otherwise they will jump right out of your arms! This was Kyecen's favorite part! We came back to this area several times :)

This guy's name is Pillow! There is a bunny under there somewhere!

Back to the baby bunnies!

This is Mr. Chops, he is a pot belly pig! Kyecen says his fur is prickly :)

Hey look its my kid with a kid! haha! Okay, bad joke but this little guy was just as curious as mine!

Two week old baby lambs!

Kyecen is petting a week and a half old baby Angora Goat, she's a twin and the runt so her mommy didn't want her...but they have lots of volunteers to help take care of all the babies they have around!

This is Nelson, a baby pot belly pig, Kyecen said he isn't as prickly as Mr. Chop, he's still soft!

This pot belly pig did tricks for doggie treats!

Kyecen was so excited to get in on the action and milked the goats! He tried a couple time and impressed even Ms. Mary the owner and teacher!

At the end of the day most of the cats piled up on top of each other trying to soak in the last of the sun! I think there were about 13 cats trying to share that one spot!

Kyecen can't wait to go back! What a great place with classes and everything!
