Happy 3rd Birthday Kyecen

Kyecen is 3!!!
I can't believe that he is three years old already!!!

He decided that he wanted a Buzz Lightyear and Woody party...and mommy went crazy trying to make it happen : ) Here is the result!

FIRST DAY OF SCHOOL!

Kyecen started school this month..aaghh!
He is such a big kid! I know it's only preschool and it's only 2 days a week for 2 hours a day...but he is my little man and he's starting school like a big kid!

French Onion Soup : )

French Onion Soup
It was delicious!
We found a yummy recipe...and Rob modified a little : ) 

Sautee 2-3 White Onions in Butter (3TBSP) until soft and starting to brown,
add into hot crock pot with 3 TBSP of Flour, 1TBSP Worcestershire Sauce, 1 tsp Sugar, 1/4 tsp Pepper, and 4 Cans Beef Broth...cook on low heat 7-9 hours until onions are very tender!


I found these cool Crock Mugs!
We filled them with the soup and topped them with a slice of French Bread and Provolone, put it in the oven for a couple minutes to get a good melt...and Ta Da! Delicious!

Feeling Grateful : ) and Happy!


So feeling very emotional today…and being so grateful for all of the amazing people in my life.

First of all my son, Kyecen is such an amazing, smart, funny, snuggly little boy. I cannot believe that he is going to be 3years old this month! And, he started preschool today! To big too fast! I don't know where the time has gone but I know that he is the best thing that ever happened to me and he makes me grateful for life every day. I am so excited for him and all the adventures he is going to have this next year, learning and growing…and causing trouble!

Second, my parents. They are the best grandparents in the world! Kyecen is spoiled rotten! They are his "Best Friends"!  He loves spending time with them and most of the time doesn't want to come home because their house is more fun! But, I am spoiled rotten too! I have free babysitters anytime I need, I can go to work and not worry that he isn't getting the best care. They spoil my son! I believe that over the years we have become friends, we can hang out and have dinner, shop, or talk about life. But they are also the most supportive and helpful people I know. They support me and let me know I am a good mom, they tell me that it is possible to have the career I want, and they have supported me even when I haven't made the best decisions.  I would be lost without them.

Rob. I love him. What an amazing man. He loves me. He loves my son too.  It is great to be loved, but as a single mom to find that man that loves your kid too is the greatest thing in the world. He is an amazing dad! He is patient, he disciplines, he snuggles, he teaches, he loves him! I'm not sure where I thought I would be now, but I never thought I would find this man. This has been another great blessing in my life. He keeps me stable/sane, he wants to take care of this family we are building, he helps me keep the house clean! 
IN LOVE WITH THIS MAN! 
He too is supportive of me, of my hopes and dreams, and my crazy ideas! I would be lost without him too!

Rob's parents! They are amazing too! I've gotten a couple opportunities to spend time with them and have fallen in love with his family too! (and Florida!) They are supportive of Rob in everything he does, which extends to me and Kyecen too! The old wives tale that men marry someone that is like their mothers is funny, but true…when we visited Florida we found that Lynne and I are very much alike : ) and many times "in stereo" made fun of Rob, answered him, etc…he was not happy about this! What a great trip! (I promise I will blog about this soon!) I love the beach, don't hate the weather, and I got to spend quality time with Rob's mom! 

Of course, I love my job. I guess not of course, I have had many jobs that I do not love…some that I have even not liked. But this one I love! I love that it is in the event industry, that it is flexible so that I can take care of my family, and most of all I love that the family I work for has become family!

I can also say grateful for another birthday, we won't talk numbers, but grateful for another year that I have gotten to spend being a mommy, spending time with my family. Spent learning, loving, growing, and hopefully being able to share who I am and what I know with people that have learned and grown from me.

Okay, I guess I will end my rant here : ) I was just feeling a little overwhelmed today and thought I'd share.  I hope that everyone else has as many people that love and support them and a life they feel grateful for!

Playdough Volcanos!

Rob and Kyecen thought it would be fun to have a little science experiment in our living room...
I was glad it wasn't too messy!

Look Mom it's a volcano! (Playdough with baking soda and red sprinkles for color!)

Add a little vinegar and watch it explode...

A Package from Florida! 6-5-12

Kyecen loves to get the mail, and it is a wonder how he already gets the concept that it specifically comes from someone to someone...to Mommy, to Rob, and even the daily question if something is for him!

He got a package from Florida!!! All we have to tell him is that something is from Florida and he knows that it comes from Rob's mommy and daddy! It was no different this time, and he was so excited to get it open!
He got a t-shirt with a turtle on it! 

And a book about Dolphins! He loves to learn and loves animals!














He was so excited that he immediately put his new shirt on and wanted to read his book!

Pintrest Tuesday!!! Florentine Chicken Saltimbocca 6-19-12

I am usually the baker, but here it goes, I made dinner all by myself!!!!

I used a mix of a few different recipes that I found until I thought I had something I would be happy with!

Chicken, Prosciutto, Spinach, Riccotta Cheese, and Parmesan.
(Rob trimmed and cut the chicken for me!) Then I seasoned it with Salt and Pepper,

A piece of Prosciutto, some spinach (thaw a package of the frozen kind and squeeze out all of the juice)

Then a sprinkle of Parmesan and a Dollop of  Ricotta Cheese,

Roll it all up like sushi and use toothpicks to hold it together!

Olive Oil in the bottom of the pan and sear the chicken for about 2 minutes on each side,

Then add a can of Chicken Broth and turn it down and simmer it for about 20 minutes!

For a side I made my signature Creamy Baby Red Mashed Potatoes!

I boiled a 3lb bag of Baby Red Potatoes until they were soft, then put them in my magic blender : )
Added a stick of butter, 1/2 C Half and Half, and Salt and Pepper!!!

Here is my spin on Florentine Chicken Saltimbocca with Creamy Baby Red Mashed Potatoes.

This was good, not amazingly yummy that I want to eat it once a week, but I would make some changes and I think that it could be added to the rotation...
I would mix the Ricotta Cheese, Parmesan, and Spinach(a lot less spinach) before I put it inside the Chicken.
