Playdough Volcanos!

Rob and Kyecen thought it would be fun to have a little science experiment in our living room...
I was glad it wasn't too messy!

Look Mom it's a volcano! (Playdough with baking soda and red sprinkles for color!)

Add a little vinegar and watch it explode...

or trickle down the side...

Attempt 2...more baking soda, and more vinegar!

A Package from Florida! 6-5-12

Kyecen loves to get the mail, and it is a wonder how he already gets the concept that it specifically comes from someone to someone...to Mommy, to Rob, and even the daily question if something is for him!

He got a package from Florida!!! All we have to tell him is that something is from Florida and he knows that it comes from Rob's mommy and daddy! It was no different this time, and he was so excited to get it open!
He got a t-shirt with a turtle on it! 

And a book about Dolphins! He loves to learn and loves animals!














He was so excited that he immediately put his new shirt on and wanted to read his book!

Pintrest Tuesday!!! Florentine Chicken Saltimbocca 6-19-12

I am usually the baker, but here it goes, I made dinner all by myself!!!!

I used a mix of a few different recipes that I found until I thought I had something I would be happy with!

Chicken, Prosciutto, Spinach, Riccotta Cheese, and Parmesan.
(Rob trimmed and cut the chicken for me!) Then I seasoned it with Salt and Pepper,

A piece of Prosciutto, some spinach (thaw a package of the frozen kind and squeeze out all of the juice)

Then a sprinkle of Parmesan and a Dollop of  Ricotta Cheese,

Roll it all up like sushi and use toothpicks to hold it together!

Olive Oil in the bottom of the pan and sear the chicken for about 2 minutes on each side,

Then add a can of Chicken Broth and turn it down and simmer it for about 20 minutes!

For a side I made my signature Creamy Baby Red Mashed Potatoes!

I boiled a 3lb bag of Baby Red Potatoes until they were soft, then put them in my magic blender : )
Added a stick of butter, 1/2 C Half and Half, and Salt and Pepper!!!

Here is my spin on Florentine Chicken Saltimbocca with Creamy Baby Red Mashed Potatoes.

This was good, not amazingly yummy that I want to eat it once a week, but I would make some changes and I think that it could be added to the rotation...
I would mix the Ricotta Cheese, Parmesan, and Spinach(a lot less spinach) before I put it inside the Chicken.

Pintrest Thursday...somethings fishy! 6-14-12

Okay, so our Pintrest Tuesdays have really moved to any day of the week we see fit...and to multiple days of the week! There's just too many good things to save for once a week, and we always love new things or a new spin on our old favorites...We visited the Asian Market Lee Lee's again to get us some fish!!! Mahi Mahi to be specific, or Dolphin, as Rob says it's called down by the ocean...I'm not so keen on that name, but I do love it! This group of recipes is definitely going down in the books to be made again!

So on to our tasty little concoction!
Pan Seared Mahi Mahi on a bed of Cilantro Lime Coleslaw with a Mango Pineapple Salsa

PHENOMENAL!!!

Cabbage, Cilantro, Green Onion, Diced Jalepeno (minus the seeds cause I'm a wuss!)

 
add in Mayo, 1/2 a Fresh Squeezed Lime, Cumin, Salt and Pepper 
All this makes a VERY YUMMY Cilantro Lime Coleslaw!
Start with all the basics of a great salsa...Tomato, Cilantro, Onion, Green Onion, Red Pepper, Jalepeno, Salt, Pepper, and Cumin

Add in Pineapple and Mango...

Then mix it all up!!!

Two Delicious recipes that pair so well together, especially on Mahi Mahi!!!!

Pan Seared Mahi Mahi, just a little salt and pepper to season!

What a beautiful dish! Look at all that color! (My mouth is watering thinking about it!)

It was just as delicious as a taco!!! Look at those gorgeous flakes of Mahi!

Pintrest is all Fluffy! 6-18-12

I don't know what the official name for these is so Dylan and I decided on...
Marshmallow/Cinnamon/Sugar/Crescent Roll Bites!


All the ingredients...yup that's it!
 Basically you take Marshmallows and cover them in butter,
Then cinnamon and sugar

and fill up a crescent roll with your little goodies... make them into little balls
And BAKE!!! (I obviously baked mine a little long..they're too brown and the insides spilled out everywhere...)

They taste like the gooey center of a cinnamon roll! AWESOME!

Dylan made these again with HUGE marshmallows and I think the mini marshmallows are better because they get more of the cinnamon sugar mix...

You should definitely try these!

Pintrest got Crabs! 6-8-12

Rob finally made his famous Crab Cakes!

DELICIOUS!!!
We started with an appetizer as we prepared our meal...we have to have a snack while we cook!
Shrimp Cocktail with homemade Cocktail Sauce!

I have to say this was SOOOO AMAZING! I'm definitely a seafood girl, but these crab cakes were delicious! Moist and tender, and the sauce was a perfect match!

Pintrest Tuesday 5-29-12...Chocolate Cupcakes with Peanut Butter Frosting

I found a very very yummy chocolate cake recipe!!! 
I hadn't been able to find one yet that was tasty and fluffy but I think I found one! 
I wish I would have taken a picture of the batter, the very last ingredient was 1cup of boiling water...it looked super runny so I wasn't too sure on how it would bake up, but...they were perfect!

Then came my next craving/pintrest inspiration
PEANUT BUTTER!!!
I used the same recipe as the blogger did that I took the Chocolate Cake recipe from...
Butter, Cream Cheese, Peanut Butter, Powdered Sugar, and a little bit of vanilla and milk

AHHMAZING!!!!!
Not as fluffy as I was hoping for, but the taste is all there! I didn't play with it too much, but next time I will add more powdered sugar and keep on blending it...we'll see where it goes from there?!!
I doubled the recipe again cause I like to share : ) 24 regular and 72 mini's 
I topped them all of with a mini Reese's Peanut Butter Cup!
(as Rob says, "It's all about presentation!")

If you didn't get to try these this time, I WILL make these again!!!

Pintrest Tuesday 5-22-12

So this week Pintrest Tuesday was taken on the road!
We took our second camping trip of the season and went to our favorite spot at Canyon Lake!

3 days of lake, sun, dirt and CAMPFIRES!!!!
We did the easy route one night with Burgers and Dogs (The Phoenix Suns Dogs to be exact!) Then we did Steak and corn on the cob (I wrapped them in tinfoil after I seasoned them and added a little bit of butter)
Joe and Becca added to Pintrest Tuesday-Camping Edition with a Pasta Salad! Yummy and Perfect for a cool afternoon quick lunch ; )

I wish I had pictures : ( but I just didn't have my mind on my camera this time...Rob did get a few of our setup and our goings ons at the campsite!

 We fished for hours between all of us...This was the only fish caught (I only fished for about 15 minutes!)
This is how we relax! Kyecen was napping, I was soaking in the water with a good book, and we were just hanging out doing NOTHING!!! 
Rob, Kyecen, Becca and Joe took a float down towards the dock and did some jumping!

Hoping that this is just the start of camping season! And we're hoping to explore some new locations, maybe up north where its cooler?!?

F14 Tomcat

I guess its about time to blog about the remote control airplane...
Rob bought a HUGE remote control airplane
We've taken it out on two flight attempts...but it has proven a little more
tricky to get off the ground than we thought...
We tried a wide open stretch of road for the first flight...never got more than 6 inches off the ground...
then crashed hard, into the curb...smashed the nose


Next flight was scheduled at Seville on the 2nd hole of the Golf Course...We got off the ground, for about 30 seconds...then crashed into the tee box...quite a bit of damage this time : (

Can you see it?! We made it almost all the way down the second hole...then crash...

Damage!

Maybe we'll figure out how to fly it some day...and by we I mean Rob ; )



We also have some helicopters to fly around in the house! These are a little easier to control!
